I would suggest a prior use for cutting implements rather than first starting on thick hides. The only other available food source when scavenging bones would be the dried scraps of meat or sinew still attached to the bones. This would have been easily removed with a sharp scraper enabling the cutter to eat it there and then or take it with them. It is an easy progression from this to the butchering of carcasses.
